RECIPES
- Preheat oven to 350 degrees.
- Place 1 cup steel cut oats in a large bowl and cover with 1 cup of boiling water. Let sit uncovered for 2 hours.
- In a medium bowl sift:
- 2 1/4 cups flour
- 2 ½ teaspoons baking powder
- 1 teaspoon salt
- In a small microwave safe bowl, melt:
- 4 tablespoons butter
- 3 tablespoons honey
- Stir melted butter and honey into large bowl with oats.
- Beat 1 egg add 2/3 cup milk to it.
- Alternately add milk mixture and flour mixture to large bowl with oats stirring with a wooden spoon as you add each. Do not over mix, just mix to combine wet into dry.
- Put dough into non-stick muffin tins.
- Cook for 35 minutes.
