STEEL CUT MUFFINS

Directions

  1. Preheat oven to 350 degrees.
  2. Place 1 cup steel cut oats in a large bowl and cover with 1 cup of boiling water. Let sit uncovered for 2 hours.
  3. In a medium bowl sift:
    • 2 1/4 cups flour
    • 2 ½ teaspoons baking powder
    • 1 teaspoon salt
  4. In a small microwave safe bowl, melt:
    • 4 tablespoons butter
    • 3 tablespoons honey
  5. Stir melted butter and honey into large bowl with oats.
  6. Beat 1 egg add 2/3 cup milk to it.
  7. Alternately add milk mixture and flour mixture to large bowl with oats stirring with a wooden spoon as you add each. Do not over mix, just mix to combine wet into dry.
  8. Put dough into non-stick muffin tins.
  9. Cook for 35 minutes.
