Baked Breaded Shrimp

Ingredients

  • shrimp (jumbo = 21-25 per pound or large) (1 lb.)
  • cornstarch (1/3 cup)
  • eggs (2)
  • breadcrumbs (1 1/2 cups)
  • salt (1/4 teaspoon)
  • black pepper (1/4 teaspoon)
  • seafood seasoning (optional) (1 teaspoon)
  • garlic powder (optional) (1/4 teaspoon)
  • paprika (optional) (1/4 teaspoon)
  • Cooking spray

Instructions

  1. Pat shrimps dry.
  2. Place the cornstarch (1/3 cup) in a shallow bowl.
  3. Beat eggs (2) with water (1 tablespoon)and place in another shallow bowl.
  4. Combine breadcrumbs and seasoning and add to a third shallow bowl.
  5. Using kitchen tongs, dip shrimp to coat in the cornstarch.
  6. Next dip in the eggs and last toss into the breadcrumbs.
  7. Arrange on a baking sheet, covered with parchment paper.
  8. Spray shrimp on top with cooking spray. Flip and spray the other side.
  9. Bake at 400 F for 8-12 minutes (5-8 minutes for large shrimp), turning once, until the shrimp is golden brown on the inside and fully cooked.
