Baked Sweet and Sour Chicken

Ingredients

  • boneless, skinless chicken breasts, cut into cubes (2)
  • cornstarch (1/3 cup)
  • garlic powder (1/2 teaspoon)
  • salt (1/2 teaspoon)
  • black pepper (1/4 teaspoon)
  • olive oil (2 tablespoons)
  • pineapple juice (1/2 cup)
  • ketchup (1/2 cup)
  • brown sugar (1/4 cup)
  • apple cider vinegar (2 tablespoons)
  • diced onion (1/4 cup)
  • diced bell pepper (1/4 cup)
  • diced pineapple (1/4 cup)

Instructions

  1. Preheat oven to 375°F.
  2. In a shallow bowl, mix together cornstarch, garlic powder, salt, and pepper.
  3. Place chicken cubes in the bowl and toss to coat.
  4. Heat olive oil in a large skillet over medium-high heat.
  5. Add chicken cubes and cook for 3-4 minutes, stirring occasionally, until chicken is lightly browned.
  6. In a medium bowl, mix together pineapple juice, ketchup, brown sugar, and apple cider vinegar.
  7. Place chicken cubes in a 9x13 inch baking dish.
  8. Pour pineapple juice mixture over chicken.
  9. Top with diced onion, bell pepper, and pineapple.
  10. Bake for 25-30 minutes, or until chicken is cooked through.
