Egg Salad

Ingredients

  • eggs, hard boiled and cooled (8)
  • mayonnaise (1/2 cup)
  • yellow mustard (1 1/2 teaspoons)
  • green onion, thinly sliced (1)
  • celery, finely diced (1 rib)
  • fresh dill, chopped (2 teaspoons)

To Hard Boil Eggs:

  1. Place eggs in a saucepan and cover with water ½″ above the eggs. Bring to a rolling boil over high heat. Cover and remove from heat.
  2. Let stand covered for 15-17 minutes (for large eggs).
  3. Remove from hot water and place in a bowl of ice water for 5 minutes.

Instructions

  1. Cut eggs in half. Remove yolks and chop whites.
  2. Mash yolks with mayonnaise, mustard and salt & pepper to taste until smooth and creamy.
  3. Add remaining ingredients and stir well.
  4. Serve on bread or over lettuce.
