Creamy Cucumber Salad
Ingredients
- medium-large English Cucumber (2)
- Kosher Salt (1 teaspoon)
- White Vinegar (2 tablespoons)
- Fresh Dill Weed (2 tablespoons)
- White Sugar (1 tablespoon)
- garlic powder (1 teaspoon)
- fresh ground peppe (1/2 teaspoon)
- Mayonaise (3/4 cup (6 tablespoons for 1 cucumber))
Instructions
- Cut cucumbers lengthwise.
- Using a small spoon, scrape the seeds out of the middle.
- Now chop cucumbers into smaller pieces.
- Toss with salt.
- Lay out flat on a baking sheet, with a paper towel under the cucumbers, and let sit for 30 mins to an hour. This will help draw out moisture.
- Meanwhile, mix together sauce by combining all sauce ingredients into a large bowl, and whisking until smooth.
- After the allotted time, take an additional paper towel, and blot the cucumbers dry.
- Put cucumbers in large bowl with sauce, and stir to coat evenly.
- Refrigerate until ready to serve.
