Honey Lemon Dijon Crusted Chicken

Ingredients

  • Dijon mustard (3 tablespoons/45 ml)
  • liquid honey (2 tablespoons/30 mL)
  • lemon juice (1 tablespoon/15 mL)
  • finely chopped fresh garlic (2 teaspoons)
  • panko bread crumbs (1/2 cup/125 mL)
  • chopped fresh parsley (1 tablespoon)
  • boneless skinless chicken breasts (1 3/4 lbs (775 g))
  • sea salt (1/4 teaspoon)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Mix mustard, honey, lemon juice and garlic in medium bowl until well blended.
  3. Mix panko and parsley in shallow dish.
  4. Brush mustard mixture all over chicken breasts.
  5. Press chicken into panko mixture to coat on one side.
  6. Arrange in single layer on parchment-lined shallow baking pan.
  7. Bake 20 to 25 minutes or until chicken is cooked through and coating is lightly browned.
  8. Let stand 5 minutes.
  9. Slice chicken and shingle on serving platter.
