Neilson Buttermilk Bran Muffins

Ingredients

  • buttermilk (2 cups)
  • bran cereal (All Bran) (1 1/2 cups)
  • eggs (2)
  • melted butter (1/3 cup)
  • vanilla (1 teaspoon)
  • brown sugar (1 cup)
  • whole wheat or all-purpose flour (2 cups)
  • all-purpose flour (1/2 cup)
  • baking soda (1/2 teaspoon)
  • salt (1/4 teaspoon)
  • baking powder (2 teaspoons)
  • cinnamon (1 teaspoon)

Instructions

Yields 12 muffins.

  1. Preheat oven to 400F.
  2. Combine butter milk (2 cups) with bran (1 1/2 cups) and set aside.
  3. Mix together eggs, melted butter (1/3 cup) and vanilla (1 teaspoon). Stir into buttermilk mixture.
  4. Add flour (2 cups), baking soda (1/2 teaspoon), salt (1/4 teaspoon), baking powder (2 teaspoons) and cinnamon (1 teaspoon) in a bowl and mix.
  5. Stir brown sugar (1 cup) into remaining dry ingredients.
  6. Add buttermilk mixture and stir just until blended.
  7. Fill muffin tins 3/4 full.
  8. Bake 20 to 25 minutes.
