Neilson Buttermilk Bran Muffins
Ingredients
- buttermilk (2 cups)
- bran cereal (All Bran) (1 1/2 cups)
- eggs (2)
- melted butter (1/3 cup)
- vanilla (1 teaspoon)
- brown sugar (1 cup)
- whole wheat or all-purpose flour (2 cups)
- all-purpose flour (1/2 cup)
- baking soda (1/2 teaspoon)
- salt (1/4 teaspoon)
- baking powder (2 teaspoons)
- cinnamon (1 teaspoon)
Instructions
Yields 12 muffins.
- Preheat oven to 400F.
- Combine butter milk (2 cups) with bran (1 1/2 cups) and set aside.
- Mix together eggs, melted butter (1/3 cup) and vanilla (1 teaspoon). Stir into buttermilk mixture.
- Add flour (2 cups), baking soda (1/2 teaspoon), salt (1/4 teaspoon), baking powder (2 teaspoons) and cinnamon (1 teaspoon) in a bowl and mix.
- Stir brown sugar (1 cup) into remaining dry ingredients.
- Add buttermilk mixture and stir just until blended.
- Fill muffin tins 3/4 full.
- Bake 20 to 25 minutes.
