Neilson Buttermilk Bran Muffins

Ingredients

  • buttermilk (2 cups)
  • bran cereal (All Bran) (1 1/2 cups)
  • eggs (2)
  • melted butter (1/3 cup)
  • vanilla (1 teaspoon)
  • brown sugar (1 cup)
  • whole wheat or all-purpose flour (2 cups)
  • all-purpose flour (1/2 cup)
  • baking soda (1/2 teaspoon)
  • salt (1/4 teaspoon)
  • baking powder (2 teaspoons)
  • cinnamon (1 teaspoon)

Instructions

Yields 12 muffins.

  1. Preheat oven to 400F.
  2. Combine butter milk with bran and set aside.
  3. Mix together eggs, melted butter and vanilla. Stir into buttermilk mixture.
  4. tir brown sugar into remaining dry ingredients.
  5. Add buttermilk mixture and stir just until blended.
  6. Fill muffin tins 3/4 full.
  7. Bake 20 to 25 minutes.
