One-Pot Turmeric and Red Lentil Vegetarian Dal

Ingredients

  • coconut oil or ghee (2 tablespoons)
  • medium yellow onion diced (1)
  • gloves garlic diced (4)
  • fresh ginger (2 tablespoons)
  • curry powder (2 teaspoons)
  • cumin (1 teaspoon)
  • turmeric (1/2 teaspoon)
  • paprika (1/8 teaspoon)
  • cayenne pepper (1/2 teaspoon)
  • red lentils (1 1/2 cup)
  • 14 oz can coconut milk (1)
  • vegetable broth (2 cups)
  • baby spinach (4 large handfuls)
  • sea salt (1/4 teaspoon)
  • black pepper (1/4 teaspoons)
  • cooked quinoa or brown rice to serve (2 cups)
  • cilantro chopped, to serve (1 cup)
  • red pepper flakes, to serve (1 teaspoon)

Instructions

  1. Add coconut oil or ghee to a large stockpot over medium heat. Add onion, garlic, and all spices (curry, cumin, turmeric, cayenne pepper).
  2. Saute mixture together until onions and garlic are translucent and spices are fragrant, about 5 minutes.
  3. Add red lentils, coconut milk, and vegetable broth.
  4. Bring mixture to a simmer and reduce heat to medium-low.
  5. Cook dal for 15-20 minutes, stirring every 5 minutes, or until mixture has thickened and lentils are tender.
  6. Stir in spinach until gently wilted. Add sea salt and pepper, to taste.
  7. Serve dal with cooked quinoa or brown rice, a handful of chopped cilantro, and a sprinkle of red chili flakes.
