Patak's Mild Chicken Curry
- 500 grams of chicken (2-3 breasts)
- 100 grams of chopped tomatoes
- 400 mL coconut milk
- Fry an onion in 3 tbs of oil until soft.
- Add 2 tsp of finely chopped ginger, half a jar of paste, 50 mL of water.
- Cook until water has evaporated.
- Add 500 grams diced chicken, seal.
- Add 100 grams chopped tomatoes and cook for 3 minutes.
- Add can of coconut milk.
- Simmer until cooked — about 15 minutes.
