Patak's Mild Chicken Curry

Ingredients

  • onion
  • ginger
  • chicken breast (500 grams/2-3 breasts)
  • chopped tomatoes (100 grams)
  • coconut milk (400 mL)

Instructions

  1. Fry an onion in 3 tbs of oil until soft.
  2. Add 2 tsp of finely chopped ginger, half a jar of paste, 50 mL of water.
  3. Cook until water has evaporated.
  4. Add 500 grams diced chicken, seal.
  5. Add 100 grams chopped tomatoes and cook for 3 minutes.
  6. Add can of coconut milk.
  7. Simmer until cooked — about 15 minutes.
