Creamy Potato Salad

Ingredients

  • red potatoes (2 1/2 lbs)
  • mayonnaise (3/4 cup)
  • spicy brown mustard (1 tablespoon)
  • pickle brine (2 tablespoons)
  • sugar (1/2 teaspoon)
  • clove garlic (1)
  • celery stalks (3)
  • large dill pickle, finely chopped (1 (about 1/2 cup))
  • scallions (2)
  • salt

Instructions

  1. Cut potatoes.
  2. Place potatoes in large pot and add enough water to cover by 1 inch.
  3. Once boiling, add 1 tablespoon salt and simmer until the potatoes are tender, 12 to 15 minutes.
  4. Drain potatoes.
  5. In large bowl, whisk mayonnaise, mustard, brine, sugar, garlic, and 1 1/4 teaspoon salt; set aside.
  6. Gently toss potatoes with dressing.
  7. Let cool for 15 minutes.
  8. Cut celery, dill pickle, and scallions and add to potato mixture.
