Potatoes Parmentier
Ingredients

- broth to parboil potatoes in
- high smoke point fat (duck fat, schmaltz, beef tallow, sunflower, corn)
Instructions
- Preheat oven to 425 degrees F.
- While it heats up, slide your sheet pan into the oven with a drizzle of high smoke point fat; this way, your potatoes hit a hot surface right away (a key step for crispiness)
- Cut your potatoes into 1/2-inch cubes.
- Bring a pot of salted water to a boil and parboil (in broth) the potatoes for about five minutes.
- After cooking, drain the excess water, then let them sit for a minute or two to dry slightly.
- Carefully add the potatoes to your hot sheet pan, then roast for 30 to 40 minutes.
- Flip the potatoes at least once while roasting to ensure even crispiness on all sides.
