Potatoes Parmentier

Ingredients

  • potatoes
  • broth to parboil potatoes in
  • high smoke point fat (duck fat, schmaltz, beef tallow, sunflower, corn)

Instructions

  1. Preheat oven to 425 degrees F.
  2. While it heats up, slide your sheet pan into the oven with a drizzle of high smoke point fat; this way, your potatoes hit a hot surface right away (a key step for crispiness)
  3. Cut your potatoes into 1/2-inch cubes.
  4. Bring a pot of salted water to a boil and parboil (in broth) the potatoes for about five minutes.
  5. After cooking, drain the excess water, then let them sit for a minute or two to dry slightly.
  6. Carefully add the potatoes to your hot sheet pan, then roast for 30 to 40 minutes.
  7. Flip the potatoes at least once while roasting to ensure even crispiness on all sides.
