Roasted Sausages and Sweet Potato-White Bean Stew

Ingredients

  • medium sweet potatoes (2)
  • small sweet onion (1)
  • sprig fresh thyme (4)
  • clove garlic (2)
  • salt (3/4 teaspoon)
  • freshly ground pepper (3/4 teaspoon)
  • olive oil (2 tablespoons)
  • pork sausage links (8)
  • low-sodium chicken broth (1 can)
  • Swiss chard (or other hearty greens) (1 bunch)
  • cannellini beans (1 can)

Instructions

  • Heat oven to 450 degrees F.
  • Toss together first 7 ingredients in a large roasting pan. Arrange in a single layer, and place sausage on top of vegetables.
  • Bake at 450 degrees F for 20 minutes. Remove pan and stir in broth and next 3 ingredients. Bake 10 more minutes or until sausage is browned and potatoes are tender.
