Roasted Sausages and Sweet Potato-White Bean Stew
Ingredients
- medium sweet potatoes (2)
- small sweet onion (1)
- sprig fresh thyme (4)
- clove garlic (2)
- salt (3/4 teaspoon)
- freshly ground pepper (3/4 teaspoon)
- olive oil (2 tablespoons)
- pork sausage links (8)
- low-sodium chicken broth (1 can)
- Swiss chard (or other hearty greens) (1 bunch)
- cannellini beans (1 can)
Instructions
Heat oven to 450 degrees F.
Toss together first 7 ingredients in a large roasting pan. Arrange in a single layer, and place sausage on top of vegetables.
Bake at 450 degrees F for 20 minutes. Remove pan and stir in broth and next 3 ingredients. Bake 10 more minutes or until sausage is browned and potatoes are tender.
