Tomato and Garlic Chicken Curry recipe

Ingredients

  • olive oil (1 tablespoon)
  • chicken breasts cut into chunks (400 grams)
  • onion (1)
  • garlic gloves (4)
  • ground cumin (1/2 teaspoon)
  • turmeric (1/2 teaspoon)
  • red chili flakes (1/2 teaspoon)
  • ground cinnamon (1/2 teaspoon)
  • ground coriander (1/2 teaspoon)
  • tomato puree (2 tablespoons)
  • chopped tomatoes (Roma, preferably) (400 gram can)
  • coconut milk (1 can)
  • fresh cilantro (handful)
  • split lentils (1/3 cup)
  • grated ginger (thumb sized piece)

Instructions

  1. Add the olive oil to a large pan and add the onion, garlic and ginger and cook for 3 minutes until softened.
  2. Add the chicken and cook for a further 3 minutes until browned.
  3. Once the chicken is browned, add the red chilli flakes, cumin, turmeric, cinnamon and coriander to the pan and mix well and cook for 1 minute.
  4. Add the chopped tomatoes, coconut milk, lentils, and tomato puree and gently simmer for 20 minutes until the chicken it cooked through.
