Tomato and Garlic Chicken Curry recipe
Ingredients
- olive oil (1 tablespoon)
- chicken breasts cut into chunks (400 grams)
- onion (1)
- garlic gloves (4)
- ground cumin (1/2 teaspoon)
- turmeric (1/2 teaspoon)
- red chili flakes (1/2 teaspoon)
- ground cinnamon (1/2 teaspoon)
- ground coriander (1/2 teaspoon)
- tomato puree (2 tablespoons)
- chopped tomatoes (Roma, preferably) (400 gram can)
- coconut milk (1 can)
- fresh cilantro (handful)
- split lentils (1/3 cup)
- grated ginger (thumb sized piece)
Instructions
- Add the olive oil to a large pan and add the onion, garlic and ginger and cook for 3 minutes until softened.
- Add the chicken and cook for a further 3 minutes until browned.
- Once the chicken is browned, add the red chilli flakes, cumin, turmeric, cinnamon and coriander to the pan and mix well and cook for 1 minute.
- Add the chopped tomatoes, coconut milk, lentils, and tomato puree and gently simmer for 20 minutes until the chicken it cooked through.
