Turkey Sausage and Cannellini Bean Soup

Ingredients

  • Italian turkey sausage links casings removed (3 (4 ounces each))
  • medium onion (1)
  • garlic cloves, minced (2)
  • cannellini beans, rinsed and drained (1 can (15-ounce/443 mL))
  • chicken broth (2 cups)
  • water (1 cup)
  • pepper (1/4 teaspoon)
  • escarole or spinach, chopped (1 bunch)
  • shredded Parmesan cheese (4 teaspoons)

Instructions

  1. Cook the sausage and onion in a large saucepan over medium heat until meat is no longer pink; drain.
  2. Add garlic; cook 1 minute longer.
  3. Stir in the beans, broth, water, wine and pepper. Bring to a boil.
  4. Add escarole; heat through.
  5. Sprinkle with cheese.
